Heat Treated Wheat Flour

Heat treated wheat flours were developed so that manufacturers making ready-to-eat products could safely use flour in applications that don't use heat or go through a baking process. These flours are used in applications such as edible cookie dough, candy, bakery mixes and cold-pressed bars. Additional heat treated wheat flours have since been developed as replacements for chemically modified starches.
