Real Questions
Real Answers

Clear guidance on sourcing, scalability, and documentation for your application.

What sourcing issues create the most risk in cookie and bar formulations?
Sugar type, fat system, and inclusion availability drive spread, bite, and shelf life more than most teams expect. A change in syrup solids or chip particle size can force a reformulation even when the ingredient name stays the same. Batory's diverse sourcing network keeps these inputs on spec and on time so you can avoid last-minute line changes.
What has to be validated when a bench formula moves to wire-cut, rotary, or slab lines?
Test dough machinability, spread ratio, bake loss, and bar cut integrity at production rate. Sheet relaxation and water migration into inclusions should be checked before locking the formula. Batory's process specialists can help you troubleshoot shear and viscosity issues so production runs to spec.
What supplier documentation is most important for this category?
Quality teams usually want specifications, COAs, allergen controls, and micro standards for inclusions and syrups. Water activity targets and shelf life data are often required because texture drift shows up late in storage. Batory keeps lot data organized and ready, with everything from certificates to micro limits, so regulatory teams stay happy.
