Specialty Syrups

Wheat Starches
Wheat starches are Non-GMO and come in a variety of options including modified, native/unmodified and pre-gelatinized and are ideal for applications in which delicate texture, flavor and light color are important.
Tapioca Starch
Tapioca starch comes from the cassava root and has good dispersibility and textural properties. Tapioca starch has a clean, bland flavor profile and is always gluten free.
Rice
Rice starches offer high viscosity, water holding capacity and excellent freeze/thaw stability. By nature rice is gluten free, easily digestible and bland tasting and is widely used in baby food applications and other gluten free products.
Potato
Potato starches offer excellent gelling properties, along with high viscosity and better water holding (due to its large starch granules) than many other starch bases. Potato starches have a clean taste and are clean and transparent in color.

Starches are used in a variety of food applications, generally for texturizing and thickening purposes. Different types of corn bases offer different functionality traits – from dent to waxy maize.

What supply issues create the most risk in creamers and whipped systems?
Fat blend, emulsifier system, and protein source all affect whitening, feathering, and foam stability. Backup materials need to match melt curve and emulsion behavior or the product can break in use. What scale-up work should be completed before commercialization?
Validate homogenization, heat treatment, overrun target, and foam stability on the actual plant or canning system.
